Recipe for khaman dhokla

 Khaman Dokla is a popular Gujarati snack made from gram flour (besan) and yogurt. Here is a simple recipe for making it:



Ingredients:

  • 2 cups gram flour (besan)
  • 1 cup yogurt
  • 1/2 cup water
  • 1 tsp ginger-green chili paste
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tsp fruit salt (such as Eno)
  • 1/2 tsp turmeric powder
  • Oil for greasing
  • Water for steaming
Instructions:

In a mixing bowl, combine gram flour, yogurt, water, ginger-green chili paste, sugar, salt, turmeric powder, and mix well to make a smooth batter.
Cover and rest the batter for at least 30 minutes.
Grease a plate or tray with oil.
Add fruit salt to the batter and mix well.
Pour the batter into the greased tray and steam for 10-12 minutes or until a toothpick inserted comes out clean.
Let it cool for 5 minutes and then cut into square pieces.
Serve hot or warm with green chutney or tamarind chutney.
