  Khaman Dokla is a popular Gujarati snack made from gram flour (besan) and yogurt. Here is a simple recipe for making it: Ingredients: 2 cups gram flour (besan) 1 cup yogurt 1/2 cup water 1 tsp ginger-green chili paste 1 tsp sugar 1 tsp salt 1 tsp fruit salt (such as Eno) 1/2 tsp turmeric powder Oil for greasing Water for steaming Instructions: In a mixing bowl, combine gram flour, yogurt, water, ginger-green chili paste, sugar, salt, turmeric powder, and mix well to make a smooth batter. Cover and rest the batter for at least 30 minutes. Grease a plate or tray with oil. Add fruit salt to the batter and mix well. Pour the batter into the greased tray and steam for 10-12 minutes or until a toothpick inserted comes out clean. Let it cool for 5 minutes and then cut into square pieces.
